My mom and I were in the mood for baking, but we were out of regular sugar. Instead of freaking out and driving to get some more, we decided to improvise. Thus, Double Brown Milk Chocolate Oatmeal cookies were born! Here’s how you can make them.

Ingredients:

1. 2 cups flour
2. 1 tsp salt
3. 1 tsp baking soda
4. 2 eggs
5. 1 tsp vanilla
6. 2 cups brown sugar
7. 3/4 cup shortening (Crisco rocks!)
8. 2 cups oatmeal, uncooked
9. 1 cup milk chocolate baking chips

Directions:

1. Preheat your oven to 350 degrees (Fahrenheit). Make sure to do this step before you begin so your oven will be at the correct temperature when you put in the cookies.

2. Beat (in mixer or by hand) together the shortening, brown sugar, and vanilla. Then add an egg, beat until creamy. Add the last egg; beat until creamy.

3. In a separate bowl, mix the flour, salt, and baking soda. Add this gradually to the wet mixture, stirring often to ensure total mixturized-ness.

4. Once all the flour mixture has been added, stir in the oatmeal, and finally, the milk chocolate chips. *Note* Of course, you may use the more traditional semi-sweet chocolate chips. The milk chocolate chips just add extra sweetness to the cookie.

5. You should end up with a pretty thick cookie dough. All you have to do now is grease a pan (or use baking sheets, in which case you do not need to grease anything) and drop the dough onto the pan by the spoonful. I found that if you lightly press the spoonful of dough in your hand, then put it on the pan, you’ll have neater looking cookies and messier hands.

6. Now, pop that pan into the fully-heated oven and wait about 13-17 minutes. I know that sounds pretty exact, but the only really finicky part about cookies is getting them baked just right. Remember that when you take the cookies out of the oven, they continue to bake for a while after. So, if the cookies are slightly brown around the edges and a tad mushy in the center, they will probably turn out just perfect.

7. Once the cookies are out of the oven, let them cool ( I know, it’s hard not to just gobble them up right then).for about 5-10 minutes so they can set.

8. Eat and enjoy your home-made Double Brown Milk Chocolate Oatmeal cookies!

Depending on how big your spoonful is, the amount of cookies this recipe will make will vary. In general, it should make about 4-5 dozen cookies. But remember, those will be kinda small cookies, but oh-so-delicious.

The most important thing about baking is to have fun! Do it by yourself, with your mom or dad, or with friends. EVERYONE can bake. It’s just a matter of reading the directions.
