Quick and Easy Dinners

Here’s an easy way to whip up a meal, especially if you like Mexican or Tex-Mex cuisine.

Have you ever been to a Mexican restaurant? Almost certainly, you would have found Nachos on the menu. Nachos can be done very simply, with just cheese and chips, as you might find in a convenience store, or it can be a very elaborate dish garnished with guacamole, sour cream and spicy salsa, and not merely called Nachos, but Nachos Grande,’ or Nachos Supreme.’ In my experience theses entrees seldom disappoint. Amazingly, a quite satisfactory rendition of Nachos can be served up in your own kitchen in about two minutes. Here’s how:

Ingredients needed:

A. Corn chips (Best to go with naturals, where there is no hydrogenated oil in the ingredients),

B. Your favorite salsa (hint: authentic salsas will not have sugar as an ingredient), and

C. Shredded cheese (Many groceries carry a Mexican version of shredded cheese).

D. Optional: sour cream, guacamole. (Can be sides.)

To cook:

1. Cover a dinner plate with 2 4 ounces of corn chips. Crush chips so they lay flat on plate.

2. Cover chips with favorite salsa. Be generous.

3. Sprinkle shredded cheese over salsa. Place in microwave on high for 45 seconds, then check if cheese is melted around edges of plate. You may have to microwave for 20 -40 more seconds depending on how big a meal you have prepared.

If you’re preparing a meal for the family, set up an assembly line! Set up 4-5 plates, do the chips on each plate, then the salsa over the chips, then sprinkle the cheese over the salsa on each plate. Zap each plate for about a minute, one after the other. Serve.
