Recipes Easy Homemade Tacos and Filling

I am a career professional, a mother of three, and step mother of three more. My life is busy, and the meals I make need to stretch as far as possible on a limited budget. I enjoy the fabulous gourmet dinner as much as the next person. How many people have lives just like mine. Work, race home, there are chores, laundry, a five year old who has decided to experiment with make0up and her own version of interior design in the bathroom, and then there is dinner to make.

I would love to say, c’mon kids, let’s go for hamburgers. With a family like mine, the price of cheeseburgers add up to a hefty bill. I believe in serving good meals that are easy to make, cheap, and still taste delicious. Taco Filling


1 pound ground beef
1 can of refried beans
1 can diced green chilies
1 package taco seasoning mix

Brown hamburger in skillet. Add taco seasoning mix and green chilies. Combine refried beans into mixture. Stir until all ingredients are combined. Lower heat to simmer.

Taco Shells

For this recipe, I keep it very simple. I do not have the knowledge to make my own tortillas so I purchase ready made corn tortillas. In a small skillet, add 2 tablespoons of cooking oil. Heat oil over high heat, reduce to medium before adding tortillas. One at a time, place tortillas in the heated oil. Allow to sit there for approximately 10-20 seconds. Flip tortillas with tongs if available. If not, a fork proves just as useful. Allow tortilla to harden, place on paper towel to drain.

After tortillas cool, fold in half and add the taco filling. Top with any desired toppings. I find onion and cilantro with a dollop of sour cream is delightful, but any of the usual taco toppings taste just as good. Enjoy!
