Recipes Gingerbread Waffles with Applesauce

In our family we do not do much for breakfast during the week, but when the weekend comes we have a big brunch. Usually we have pancakes, eggs, and bacon or sausage. Occasionally we will take a little more time in preparation and get the waffle maker out. One of our favorite fall and winter flavors is gingerbread and we love to incorporate that flavor in our waffles when the weather starts turning cold.

Gingerbread Waffles


2 cups of flour
1/2 cup brown sugar
1/2 cup molasses
2 large eggs
1 1/2 cups buttermilk
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
4 tablespoons canola oil
6 tablespoons applesauce


Heat the waffle iron.

In a large bowl mix all dry ingredients and set aside.

In a separate bowl, whisk together all wet ingredients. Add the wet ingredients to the dry and stir gently until blended.

Spray waffle iron with non-stick cooking spray. Depending on the size of your waffle iron, pour 1/3 to 1 cup of batter into the center of the waffle iron. Cook approximately 5 minutes or until steaming stops and the lid lifts easily. Repeat this process until all batter has been cooked.

Serve with warm homemade applesauce and whipped cream.
