Recipes Spanish Rice

This is a very simple spicy rice casserole. It goes great with enchiladas. I actually came up with it late one night when some friends stopped and they were hungry.

Southwest Rice Bake

1 cup uncooked rice
1 large chopped fresh tomatoes
1 small can green chilies
1-tablespoon taco seasoning mix
1 beaten egg
2 cups shredded Mexican mix cheese

Cook rice according to package directions and allow to cool. Preheat oven to 400 degrees and grease a 9″x 9″ casserole dish. In large bowl stir together rice, tomatoes, green chilies and taco seasoning mix; fold in beaten egg and half of cheese. Put mixture in casserole dish and top with remaining cheese. Bake for 20 minutes at 400 degrees.
