Strawberry Nut Bread
4 organic eggs
2 cups organic sugar
1 cup Smart Balance Oil or canola/vegetable oil
2 cups of fresh strawberries, sliced
3 cups self-rise flour, White Lily Brand
1-teaspoon sweet spice blend
(see recipe below)
1 cup chopped walnuts

Beat eggs until fluffy; add sugar, oil and strawberries. Combine flour, spice blend; sift together. Add to egg mixture and mix well. Stir in nuts. Pour into 2 greased and floured loaf pans. Bake 350 degrees for 1 hour and 10 minutes.
This was awesome bread! I used fresh berries versus frozen and thought it would make the cake dry, but the bread was so moist. I believe the type of flour you use makes a huge difference in a recipe. I always use White Lily because in my opinion it makes breads and cakes moister and melt in your mouth delicious!

Sweet Spice Blend

teaspoon cardamom
teaspoon ginger, ground
teaspoon nutmeg
teaspoon allspice
1-teaspoon cinnamon

Blend all the spices together. Add the amount that the recipe calls for.
