Ways to Cook Potato

At some point, every chef prepares and cooks extra potatoes. These popular starchy delights are loaded with beneficial nutrients that are excellent for the body.  The question is, what to do with these leftover potatoes? And, because the price of food items are exorbitant, it is imperative that you find ways to use up the leftovers. Leftover potatoes can be prepared in a variety of ways and the result can be brand new mouthwatering dishes that will please the palates of everyone. Some of the ways to utilize leftover potatoes are:

*Shepherd’s pie

A creamy leftover dish of mashed potatoes can be transformed into a delectable shepherd’s pie. Already, the potatoes are mashed, and the other ingredients needed are chopped beef, lamb or pork, green peas, onions and dried seasoning and fresh herbs. Season meat with salt and pepper. In a hot skillet, brown meat in a few teaspoon of oil. Add chopped onions, a little tomato paste and herbs. Grease a pie dish and line with left over mashed potatoes; then, add a layer of meat and sprinkle a few thawed green peas on top. Layer with mashed potatoes as the top coat. Sprinkle with a little bread crumbs and drizzle with olive oil. Bake in preheated oven at a temperature of 350 degrees until done.

*Potato patties

Mashed potatoes can be made into delicious potato patties by adding an egg wash, a pinch of salt, pepper and a little bread crumbs or flour. Pan fry these in a hot skillet and drain patties on paper towel. These should be crispy on the outside and creamy on the interior. Serve with a few dollops of sour cream.

*Potato hash

Leftover baked potatoes can be transformed into mouthwatering hash brown .Peel and cut potatoes in cubes. Render a few strips of bacon and set aside. Remove excess bacon grease and add a few drops of olive oil. Add finely chopped onions and bell peppers and stir ingredients removing all the bits from the bottom of skillet. Proceed to add cubed potatoes. Continue to brown all ingredients and add salt and pepper to taste. Add crispy bacon at the end and serve warm with fried or poached egg on top. Garnish with a dill or parsley.

*Cheesy potato soup

Once again, leftover baked potatoes can be turned into a hearty afternoon soup. Peel and cut potatoes in cubes. In a stock pot, soften diced onions, celery, and bell peppers. Make a quick roux by adding a few teaspoons of flour and stir until flour is cooked and take on a slight brown hue. Add chicken broth along with cream. Season along by adding salt and pepper to taste. Then, a few minutes to the completion of soup, add the cubed potatoes and grated cheddar cheese. Serve soup hot in its chunky form or puree soup in food processor to your preferred consistency. Top with chopped herbs of choice.

Bear in mind that whichever way you decide to serve your leftover potatoes, they will certainly be a succulent treat for you and your family.
